Strawberry Vanilla Power Breakfast Bowl

When I have a lot to do, it always feels like there aren’t enough hours in the day to get it all done. It’s easy to let things that seem unimportant fall by the wayside (like our health). In the past, a healthy breakfast and exercise were the first things to get “cut” from my list of daily tasks. I soon came to realize after frequently falling ill and feeling crummy, that things needed to change. Rather than skip an energizing-breakfast and a mood-boosting workout, I improved my time management skills. Now I don’t need to stress about whether I’ll have time for this-task or that-task because making time for my health has become a habit… making it MUCH easier to get everything accomplished! The more you practice, the better you will get (I promise)!

Here is a recipe that will not only cut down on time spent cooking, it will leave you feeling energized, healthy and satisfied! I found a little gem like this one on Pinterest which is where I got the inspiration from! (Gotta love Pinterest!) The ingredients are full of protein, “good” carbs and healthy fats.. plus vitamins and minerals the body needs to function at its best!

Strawberry Vanilla Power Bowl

Ingredients:

  • 1/2 Cup Old-Fashioned Oatmeal
  • 2 TB Chia Seeds
  • 1 Cup Unsweetened Vanilla Almond Milk (Almost any milk will do, but this is what I use).
  • 5oz Nonfat, Plain Greek Yogurt (I used Trader Joe’s brand with Fiber)
  • 2-3 Packets of Stevia (or Truvia)
  • 3-5 Large Strawberries (You can sub for any fruit, I recommend berries!)

Directions:

Add all ingredients into a resealable container and mix well. Berries can be added last or mixed with the rest of the ingredients. Refrigerate overnight. By morning, the chia seeds will have expanded and the dry oats will have softened.

Note:

Feel free to get creative! I’ve also added things like unsweetened baking cocoa, bananas, flax seed, psyllium husk, Green Grass Superfood in both Berry & Chocolate, protein powder, peanut butter and a variety of other clean eating goodies!
